Strawberry Cookie Butter Ice Cream Cake

You won’t believe how easy it is to make this ice cream cake at home! It has layers of strawberry and vanilla ice cream with a cookie crumble and strawberry jam. This flavorful dessert is easy to make ahead of time and everyone will be in awe of how delicious it is!

Everyone loves an ice cream cake and it’s even better served as a trifle to really see all those layers! It is a sweet treat that is much better than store-bought and requires simple ingredients to really make those layers come together. You don’t have to be a baker to make this dessert, ANYONE can do it in just a few easy steps. This is a great make-ahead dessert option for birthday parties, Valentine’s Day, BBQs, 4th of July, Labor Day, and more.

Ingredients for Strawberry Cookie Butter Trifle Ice Cream Cake

Ice cream cake brings me right back to my childhood when we used to drive over to Dairy Queen to pick one up to eat for dessert. There is something nostalgic and comforting about them! & making one homemade will taste even better because it comes from the heart.

If you are not a baker like I am, not to worry because you can EASILY make this. It requires little to no baking skills which is why it is easily made by anyone (even the kids can help out!).

This cake is make in a trifle dish so that you can really see all its layers. You can use a combination of ice cream flavors here. I used Vanilla and Strawberry ice cream as this is always a crowd pleaser leading into the spring and summer months!

Find the ingredients below so you can make these:

  • Vanilla Ice Cream

  • Strawberry Ice Cream

  • Graham crackers  

  • Pretzels

  • Butter

  • Vanilla or lemon cake mix 

  • Strawberries

  • Strawberry jam

The sweet and salty crust to this ice cream cake will have you going back for seconds! The key to an ice cream cake is to add in different flavor combinations and textures to make it flavorful and interesting. You get the texture from that crust and the flavor from the ice cream and jam- this strawberry flavor combination is heavenly!

Strawberry Cookie Butter Ice Cream Cake

You won’t believe how easy it is to make this ice cream cake at home! It has layers of strawberry and vanilla ice cream with a cookie crumble and strawberry jam. This flavorful dessert is easy to make ahead of time and everyone will be in awe of how delicious it is!

Ingredients

  • 1 qt Breyers Natural Vanilla Ice Cream
  • 1 qt Breyers Natural Strawberry Ice Cream
  • 10 graham crackers
  • 1.5 cups pretzels
  • 1 stick of melted butter
  • store bought vanilla or lemon cake mix
  • 1 cup chopped up strawberries
  • 1/4 cup of strawberry jam

Instructions

  1. First follow the instructions on store bought cake mix box and bake your cake- once this is baked set aside and put in the fridge to cool down
  2. Then in a blender or food processor blend together your graham crackers, pretzels and melted butter to make a sweet & salty cookie butter crumble
  3. Add this crumble at the bottom of your trifle cake container. Then add a layer of vanilla ice cream. Freeze the trifle dish for 15 minutes to freeze those first layers.
  4. Cut up the cake to fit into the trifle dish (it doesn't have to be cut perfectly and add a layer of it on top of the ice cream.
  5. Then add on a layer of your strawberry ice cream. Freeze for 15 minutes.
  6. Add on your strawberry jam, freshly chopped strawberries and some of your cookie butter crumble for the final layer.
  7. Freeze for 4 hours or overnight and ENJOY! Tip: freeze each layer you add into the trifle dish for 15 min before adding the next.
