Raspberry Lemon French Toast Casserole
This raspberry lemon French toast casserole will become a breakfast family favorite! It has everything you love about traditional French toast but all baked in one pan and easy to prepare the night before!
When growing up, my parents liked to make weekend breakfasts fun- they would have all different takes on a typical French toast but this one had to be my favorite. The flavors of raspberry and lemon are so fresh & zesty together and pair perfectly with that maple syrup and cinnamon mixture that these brioche pieces sit in overnight. It is easy to make for breakfast or brunch on holidays, valentine’s day, Easter or Mother’s Day. This is one of those recipes that everyone will be asking you for!
Ingredients for raspberry lemon French toast casserole
This overnight French toast casserole is a fan favorite! Not only are the flavors of this one fresh and zesty but they balance out the sweetness in it too.
You can assemble on the morning you plan to serve it, but my favorite way is to put it together the day before and let it sit overnight in the fridge. The next morning, all you have to do is pop it in the oven, and bake!

BEST BREAD TO USE
My favoite bread to use for this is a brioche (if you can’t find a loaf of this you can always use brioche buns). Brioche bread is soft, light and slightly sweet making it perfect for this casserole. The main idea is that you want the bread to be sturdy enough that the bread cubes will hold up after being combined with the cinnamon egg mixture.

I’m telling you right now that this French Toast Casserole is so good, you may find yourself wanting it for not only breakfast, but also for your lunch, midday snack, dinner, and dessert as well!! It also serves well the next day. I store my leftovers in an airtight container and put them int he fridge.

Variations
Change up your French toast casserole recipe with these delicious twists:
For a more savory casserole: ham and cheese, chorizo, green chiles, sausage, or crumbled bacon and brie cheese.
For a sweet casserole: thinly sliced apple, orange zest, sliced apricots, strawberries, blueberries, banana, and chopped pecans.
You can also swap ingredients, like milk for almond milk, cinnamon for nutmeg and more!
You’ll want to pour the cinnamon milk mixture on your casserole the day or night before so it has a chance to soak in it and really soak in those flavors

Raspberry Lemon French Toast Casserole
Ingredients
- One brioche bread loaf (2 days old and cut up into cubes)
- 6 oz package of fresh raspberries
- 1-2 tbsp lemon zest
- 1/3 cup lemon juice (from a fresh lemon)
- 2 cups of milk (I used 2%)
- 5 eggs
- 1/3 cup brown sugar
- 3 tbsp maple syrup
- 2 tsp vanilla extract
- 1 tsp of cinnamon
- 1 tbsp icing sugar (dusting on top after it has baked)
- 2 cups whipping cream
- 3 tbsp sugar
- 2 tsp cinnamon
Instructions
- Lightly grease your baking dish with butter or cooking oil spray
- Cut your brioche bread into cubes and add half of them to the baking dish
- Add in some raspberries on top of the bread and then add on the rest of your bread cubes
- Then add the rest of your raspberries on top of the final layer of bread cubes.
- In a separate bowl mix together the eggs, milk, maple syrup, brown sugar, vanilla, lemon juice, lemon zest and cinnamon. Whisk all of these until combined
- Pour this cinnamon milk mixture on top of the bread cubes and then press them into the mixture to make sure they all soak it up
- Cover the baking dish with foil and put in the fridge for 4 hours or overnight to soak.
- When ready to bake, uncover the casserole and heat your oven to 375 F. Bake for 35 minutes (if needed, feel free to cover the casserole with the foil part way through if it is browning too much)
- Remove from oven and let sit for 5 minutes
- While you wait for it to cool, make your homemade whipped cream or use store bought cool whip and add in some cinnamon OR serve with maple syrup
- Dust the casserole with some icing sugar (optional) and enjoy right away!
Notes
You can either use a 9 x 13 baking dish or a round 10" dish for this recipe. If you want to use something bigger than just adjust your ingredients above!
You want to add on layers of brioche and fresh raspberries to your pan or ceramic container of choice. This will ensure that each bite of the French toast casserole has some raspberries in there!
I like to serve mine with some whipped cream dusted with icing sugar
