Caramelized Onion Charcuterie Chips

Your new favorite savory snack will be charcuterie chips! They are kettle cooked chips loaded with your favorite cheese, savory caramelized onions and prosciutto. These ones have a shredded creamy Havarti cheese on top. These are perfect to make for Super Bowl Sunday!

Ingredients

  • 8oz bag of kettle chips (1 bag)
  • 1 Spanish or sweet onion
  • 8 oz Roth Creamy Havarti Cheese
  • 3 oz of prosciutto
  • Roth Caramelized Onion Dip

Instructions

  1. Heat oven to 350 F and line a baking sheet with parchment paper.
  2. Slice your onion thinly and to a pan on medium heat add some olive oil and then add in your onions once pan is hot
  3. Cook the sliced onions low and slow on medium heat stirring very often for about 30 minutes (they should have a bit of a browning to them to know that they are done)
  4. While they cook, lay out your kettle chips on the baking sheet
  5. Shred your Havarti cheese and add on-top of your chips.
  6. Then add on your caramelized onions when they are finished cooking.
  7. Cut strips of prosciutto and add it onto your chips.
  8. Bake chips in the oven for 8-10 minutes or until the cheese has melted
  9. While they bake add your room temperature caramelized onion dip into a Ziploc bag and cut a small hole in the corner
  10. After chips have baked, squeeze this dip onto your chips and enjoy right away!

Notes

The key to cooking caramelized onions is to cook them low and slow on medium heat and to keep stirring. You don't want to leave them too long in the pan without stirring or they will burn. Add a splash of water to them if you see any crust forming in the bottom of the pan. They might take a bit of time but are SO worth it when they are finished! (my tip is to cook two onions that way you have extra)

I like my caramelized onions to look this color- they should have a bit of a sweetness to them when you go to taste test them!
