Chimichurri sauce is really easy to make and adds a rich, bold flavor on top of the steak, making each bite taste like heaven. Boursin cheese is one of the most popular cheeses so you can’t go wrong with this one. This recipe is made with simple ingredients that all taste delicious together! You will be going back in for another bite.

Ingredients for Boursin Cheese Steak Bites with Chimichurri Sauce

Steak is one of the most loved meats, but people tend to steer away from serving it at a dinner party because it can be expensive. But i am here to tell you that flank steak is good quality meat on a budget- you can really get a ton of bang for your buck because it is on the cheaper side. Boursin cheese paired with a medium cooked steak is such a delicious savory pairing to enjoy!

I will walk you through below how to make the following:

  1. Homemade crostini out of a baguette

  2. Homemade chimichurri sauce

  3. Steak bites

You will only need a few ingredients to make this recipe:

  • Boursin Cheese

  • Flank steak

  • Baguette

  • Olive oil

  • Parsley

  • Garlic cloves

  • Red wine vinegar

  • Salt & pepper

Ingredients:

Boursin cheese- HUGE fan of Boursin cheese. It is one of those cheeses that just goes well with everything and I use it in a lot of my recipes. I like the garlic and fine herbs for this recipe but feel free to use any flavor Boursin you’d like. If you are looking for a substitute try a slice of brie cheese or even goat cheese would be great with this.

Flank Steak- Has a bold meaty flavor, is boneless and lean for cooking. They are also on the inexpensive side of steaks so its a win win!

Baguette- I like turning a fresh or day old baguette into my own crostini. It is really easy to do and only takes 15 minutes with barely any prep work. If you are on a time crunch you can always buy crostini from the grocery store instead for this recipe.

Chimichurri sauce- This sauce is herby and garlicky which pairs beautifully with steak. I am going to teach you how to easily make it homemade below. If you are looking for another sauce you could try a peppercorn sauce, béarnaise sauce, salsa verde OR skip the sauce and eat the steak bites as it! Lots of flavor already there.

Blueberry Goat Cheese Flatbread

Ingredients

Chimichurri Sauce
  • 1 cup fresh parsley
  • 4 cloves of garlic minced
  • 1/2 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp red pepper flakes
  • 1 tbsp lemon juice
  • salt and pepper to taste
Crostini
  • 1 baguette (I usually buy a sourdough or French loaf)
  • 1/4 cup olive oil
  • 1 tbsp flaky sea salt
Boursin Cheese Steak Bites
  • 10 oz Boursin Cheese (I used two of the garlic and herb boursin)
  • 40 - 50 oz of flank steak
  • 1 tbsp salt
  • 2 tsp pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Fresh rosemary stem (optional)
  • Crostini (see recipe below or buy ready made)
  • Chimichurri sauce (see recipe below or buy ready made)

Instructions

Crostini
  1. Heat oven to 400 F and line a baking sheet with parchment paper.
  2. First start by cutting your baguette into slices (about 1/2- 1" thick) and then spread out slices evenly on a baking sheet
  3. Brush or drizzle on olive oil to both sides of crostini and add on some salt.
  4. Put crostini in the oven to bake 8-12 minutes and flip half way through until they are golden and crispy to your liking. Once these are finished you can use right away, store in a bag to save to use later or use later for this recipe.
Chimichurri Sauce
  1. Roughly chop the parsley up and mince your garlic cloves
  2. To a blender or food processor add in all chimichurri ingredients, EXCEPT olive oil
  3. Blend ingredients together and slowly drizzle in the olive oil to thicken the sauce
  4. Blend until you get your desired consistency
  5. Taste, and adjust by adding in more salt and pepper if needed
  6. Store in an airtight container and it can be stored for up until one week. The flavors actually taste better the next day once it has time to sit & marinate!
Boursin Cheese Steak Bites
  1. Heat oven to 400 F
  2. Pat steak dry with paper towel. Season your flank steak with salt and pepper to both sides generously (no need to cut it, keep it big as is or to fit your pan if necessary)
  3. Then, to a pan or cast iron skillet on medium heat, add in olive oil and butter
  4. Once pan is hot add in your steak and fresh rosemary if you'd like that flavor in there
  5. Cook on both sides for 4 minutes each to form a golden crust. Spoon the butter/olive oil base on top of your steak as it cooks to add flavor
  6. Either transfer to a sheet pan or keep in your cast iron (over safe pan) and place the steak into the oven to finish cooking- depending on the thickness and cut of the steak will lengthen or shorten cooking times, mine was thicken as I cooked the whole steak in the pan uncut
  7. Adjust cooking time in oven for how you'd like it cooked: rare (7 minutes), medium-rare (10 minutes), medium (15 minutes), well done (18 minutes)
  8. While steak cooks, spread Boursin cheese onto each crostini bread slice
  9. Remove from oven and let steak sit for 5 minutes before slicing into it
  10. Slice steak into thin pieces to fit onto each slice of crostini
  11. Add one steak slice on top of Boursin cheese
  12. Add a bit of chimichurri sauce on top of the steak
  13. Serve right away and enjoy this easy appetizer with good company!
