French Onion Baked Brie
The flavors of French onion soup meet an oozy baked brie cheese baked inside a crispy, buttery puff pastry. This appetizer is an absolute sweet & savory dream!
This is such a cozy appetizer to serve up- wrapped up like a cheese present that is just waiting to ooze out after being baked. The fig jam offers a sweet flavor that compliments that caramelized onions beautifully. This is one of those rich appetizers that you will crave with a glass of wine!
Ingredients for FRENCH ONION Baked brie
Quality of brie cheese matters! I always recommend using a brie cheese that is French- brie cheese originated in France so if it is French you know it’s creamy, has notes of mushroom and will melt really well! When melted, the cheaper brie cheeses can often pool with oil which means they aren’t the best quality and stuffed with fillers & additives. When making baked brie, spend a little bit more on the cheese to make sure it’s a quality one.

Brie cheese
Puff pastry
Fig jam
Onion
Egg (egg wash)
Fresh thyme
This can be made on a sheet pan or in a baked brie dish. My favorite sheet pans to use are by USA pan - great quality and they never change color or warp on me. At such a great price point you can’t go wrong!

French Onion Baked Brie
Ingredients
- 8 oz brie cheese wheel
- 1 puff pastry sheet (thawed)
- 1 tbsp butter
- 1 onion (sliced- I use a sweet or Spanish onion)
- 3-4 tbsp fig jam
- 1 beaten egg
- fresh thyme (optional garnish)
Instructions
- Heat your oven to 400 F and line a baking sheet with parchment paper
- In a pan on medium- low heat add in some butter just to coat the pan and then add in your sliced onions to cook low and slow. You want to watch them and be stirring them regularly so they don't burn. The key to caramelizing them is cooking them low and slow. This will take ~30 minutes. Add a pinch of salt on the onions at the end (in the last 5 minutes) just for flavor.
- Place your puff pastry sheet on the sheet pan
- Place your brie cheese wheel in the middle and score the top of it with cross hatch marks
- Add fig jam on top of your brie and your caramelized onions
- Wrap the puff pastry around your brie like a cheese present (I cut off A BIT of the excess puff pastry as I wrap it- you don't want too much extra pastry or else it won't cook evenly)
- Add egg wash to the outside of the puff pastry to make it crispy in the oven
- Cut a few shallow slits on top of the puff pastry to allow it to cook well inside
- Place in the oven for 25 minutes or until the outside of the pastry is golden brown
- Serve with crackers or a baguette and enjoy warm!
Notes
You can prepare this in advance and then bake it fresh just before people come over. It is best served out of the oven warm!
Out of the oven this puff pastry will be like a molten lava of cheese inside! You’ll want to cut into it in front of your guests so they can see all that cheese ooze out.
The key to making caramelized onions is to cook them low and slow and constantly stir them so they don’t burn. Cook them in a bit of butter and only add on a pinch of salt towards the end of them cooking!
