You really only need a handful of ingredients to make this breakfast bake and you can mix and match the ingredients if there is a cheese you have on hand that you want to use or maybe it’s starting to go bad in your fridge- use it for this recipe! This will easily feed up to 8 people so its perfect to feed a crowd.

Brie cheese
Black Forest ham
mozzarella cheese
croissants (could be a few days old or fresh)
eggs
milk
ground mustard powder
garlic powder
salt & pepper
fresh thyme (optional garnish)
My favorite baking dishes to use are either from Staub or Pyrex- great quality and they are easy to clean. At such a great price point you can’t go wrong!
Ingredients:
Brie cheese- this is an earthy, creamy and melty cheese. It is DELICIOUS and decadent when baked in the oven and makes anything extra fancy when served for breakfast. I love adding brie cheese slices to this breakfast bake. If you are not a huge brie cheese fan, you can always substitute for havarti cheese or a white/old cheddar.
Mozzarella cheese- this cheese is what gives you that CHEESE PULL. If you are serving this at a holiday gathering and want that wow factor then add shredded mozzarella cheese on top of this breakfast bake. You can always substitute for cheddar instead.
Croissants- you can use croissants that are a few days old or fresh from the bakery. Either way they are perfect for this breakfast bake because they are light, flaky, buttery and who doesn’t love croissants??
Black Forest Ham- I love adding a savory ham to this breakfast bake. You can always substitute for prosciutto or mortadella. If you are looking for a vegetarian option, add in some mushrooms or chopped green peppers instead- both would pair great with brie cheese!
Always buy a good quality brie cheese! Brie originates in France so try to get one that says “made in France” or “made with French practices” on the label. It will be better quality and melt perfectly in the oven. I have found that the cheaper brie cheeses are not authentic and pool oil when baked. A quality French brie will be your go to for any get together especially Easter when friends and family are gathering together to soak up time together and good eats.

Ingredients
- 8 oz Brie cheese
- 6 oz Black Forest ham
- 1 cup mozzarella cheese
- 10 croissants (could be a few days old or fresh)
- 4 eggs
- 1 cup milk
- 1 tbsp ground mustard powder
- 1 tsp garlic powder
- salt & pepper to taste
Instructions
- Heat oven to 350 F and grease a 9 x 15 baking dish.
- Cut croissants into quarters, shred your mozzarella cheese and cut brie cheese into smaller slices
- Then in a bowl, whisk together your egg, milk, ground mustard and salt and pepper.
- Then dunk in your croissant pieces into this egg mixture quickly just so they are coated and put them in the baking dish
- Add in your brie cheese slices and ham in between the croissant pieces
- Then add some shredded mozzarella cheese on top
- Cover the baking dish with foil and let sit in the fridge for 30 minutes
- When you are ready to bake. Put in the oven for 20-30 minutes. Covered for the first 15 minutes and remove foil for the last 10-15 minutes.
- When the cheese is melty and bubbly it’s all done and ready to be served for brunch or breakfast!
