Brie Cheese Lobster Dip

This dip is hot, cheesy and baked to perfection with chunks of lobster in it. Always a crowd pleaser of an appetizer and feels super fancy while making and eating it!

Ingredients

  • 5-6 lobster tails or 1 lb of lobster meat
  • 8 oz brie cheese wheel
  • 8 oz softened cream cheese
  • 1 1/2 cups of shredded mozzarella
  • 2 minced garlic cloves
  • 1/2 chopped shallot
  • 1/3 cup sour cream or Greek yogurt
  • juice of 1/2 a lemon
  • 1 tsp paprika
  • salt & pepper (to taste)
  • 1 tsp chopped up parsley

Instructions

  1. Heat oven to 375 F.
  2. Boil some water in a medium sized pot and once it reaches bubbly add in your lobster tails and cook them for 5 minutes (I undercook them a bit because they will cook more in the oven)
  3. Remove lobster tails and place in an ice bath to stop the cooking process
  4. Once they are cooled down, then cut the lobster tail from the top to the tail (I used scissors) and remove lobster vein and throw away. Then take out the meat and cut into discs. Set lobster cut up chunks aside.
  5. Take the rind off your brie cheese wheel using a knife or a slicing tool like this and chop into small cubes.
  6. In a pan on medium heat add your diced shallot and garlic. Cook until fragrant and transparent (around 3 minutes)
  7. Then add in your lobster meat and paprika for 1 minute. This is to give the dip and lobster meat lots of flavor.
  8. To another bowl add softened cream cheese, sour cream, lemon juice and mozzarella and mix until combined.
  9. Then fold in your brie cheese and lobster chunks.
  10. Add dip into to an oven safe dish and top with a bit more mozzarella cheese.
  11. Bake dip for 15 minutes uncovered and add on fresh parsley for a garnish. Enjoy warm with pita chips!
