Sweet Potato Casserole

This sweet potato casserole is topped with toasted ooey marshmallows and a brown sugar pecan streusel. It’s such a comforting side dish to make around the holiday season!

One of the easiest side dishes you can make that combines sweet and savory. It’s simple and traditional and easy to make ahead of time. This dessert like appetizer will become one that your family looks forward to every year!

Ingredients for sweet potato casserole

This side dish only requires a few ingredients and is easy to make ahead of time! You can either mash your sweet potatoes fresh OR use a store bought mash- I find this cuts cook time in half. I have made the recipe both ways and the store bough sweet potato mash tastes the exact same (maybe even better because I saved so much time!).

  • Sweet potatoes

  • Marshmallows

  • Brown Sugar

  • Flour

  • Butter

  • Pecans

  • Cinnamon

This recipe can be made a day or two in advanced. Store the sweet potato mash covered in the fridge & store your streusel separately and covered in the fridge. Simply add the streusel and marshmallows onto the sweet potato mash whenever you are ready to bake to host people over.

You can use other holiday seasonings in the streusel like nutmeg and pumpkin pie spice. Up to you!

TIP: use softened butter. try to remember to use room temperature butter for this recipe as it will make your brown sugar streusel crumbly vs wet.

Sweet Potato Casserole

This sweet potato casserole is topped with toasted ooey marshmallows and a brown sugar pecan streusel. It’s such a comforting side dish to make around the holiday season!

Ingredients

  • 7 sweet potatoes (peeled, cut and boiled in the pot with skins removed)
  • 2 lb of premade sweet potato mash
  • 1 cup or more of marshmallows
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 4 tbsp softened butter
  • 1 tsp cinnamon
  • 1/3 cup chopped pecans

Instructions

  1. Heat your oven to 325 and lightly grease a casserole pan
  2. If making sweet potato mash homemade: put the sweet potatoes in a large pot. Add enough water to the pot to cover the potatoes a little more than half way. Bring the water to a boil and then turn the heat to a medium simmer. Cover and simmer until they feel tender when poked with a fork. It may take 20-40 minutes to cook your sweet potatoes depending on the size of the potatoes, but you don't want them to be mushy. After cooked, drain the water and take off the skins when the potatoes are cool enough to touch (the skins should just pop right off easily!). Mash potatoes in a pot with a potato masher.
  3. If using premade sweet potato mash, follow the instructions on the bag. Usually they are frozen and you have to add to a pot on medium heat with a bit of water until the soften for 10 minutes.
  4. Transfer the mash sweet potato to the casserole dish
  5. Prepare your streusel topping by mixing together ingredients in a bowl: brown sugar, flour, butter, cinnamon, chopped pecans and crumble/mix with your fingers.
  6. Add the marshmallows & streusel mix onto the potato mash alternating between both
  7. Bake for 15 minutes and enjoy warm!

Not all marshmallows cook the same. I use mini jet puffed marshmallows and fit they come out roasted & toasted to perfection every time! Some marshmallow brands will come out watery when baked for too long, so just be cautious which one brand buy.
