Brie Cheese Mashed Potatoes
Mashed potatoes are an easy side dish perfect for any holiday gathering. When you add a whole wheel of brie cheese, the potatoes become creamy, incredibly buttery and rich!

Brie cheese is earthy, buttery and creamy making it the perfect cheese to mash into potatoes. It not only adds flavor but a creamy texture that make these mashed potatoes irresistibly good.
TIP: make sure your brie comes to room temperature so that it melts easily into the mashed potatoes

Brie Cheese Mash Potatoes
Ingredients
- 2 lb Russet potatoes
- 2 lb Yukon Gold potatoes
- 8 oz brie cheese wheel
- 1/3 cup melted butter
- 1 cup heavy cream (or milk)
- salt & pepper to taste
Instructions
- Peel and quarter potatoes, place in a pot of cold salted water.
- Bring pot of potatoes to a boil and then turn down heat to a simmer (light bubbling)- do NOT boil your potatoes on high the entire cooking time. Cook covered for 20 minutes (until a fork can easily slide through the potatoes).
- Take the rind off your brie cheese wheel with a cheese slicer or knife and cut into cubes. Make sure brie cheese comes to room temperature.
- While potatoes cook, make your mixture by adding butter, cream & brie to a pot on medium heat. Cook & stir occasionally until cheese is almost melted, about 10 minutes)
- Drain water and put potatoes back into the pot (let them sit and steam for about 5 minutes, this is the extra water evaporating out of them that you don't want in your potatoes)
- Add some salt to your potatoes and then add on your butter mixture slowly. I usually add on half, mash with a potato masher and then taste until I have the desired taste and consistency.
- Add mash potatoes to a serving dish and serve warm with fresh herbs on top like rosemary.
